Welcome to the world of MUFA eating.

MUFA (moo-fa) are "good" fats like olive oil, avocados, nuts and, (drumroll please) dark chocolate.

I stumbled across a pile of information about MUFAs, including recipes, and discovered that I could live with a MUFA-dense eating style. Portion control is, of course, important...MUFAs are not low fat...but a little goes a long way to fill you up. And, supposedly, flatten the tum. A side effect to be hailed.

Dinner tonight would have made a lovely photo-grilled shrimp, whole wheat pasta, cashews, sesame seeds, celery, diced cucumber, all tossed with 1 little teaspoon of EVOO. Yum and very filling-I didn't even want my one square of dark chocolate. The recipe called for sesame oil, which I don't have and won't buy...obviously the sesame oil manufacturers have taken "rising oil prices" personally.

I'll have the chocolate later.
